Vegan Chicken Pot Pie

This Vegan Pot Pie is such a delicious and hearty meal!

In a large bowl, whisk together the flour and salt. Cut the cold butter into the mixture.

Add the cold water a little at a time. Form the dough into a ball, cover them with plastic wrap, and chill them  for 1 hour.

Preheat the oven to 375°F. Sauté the onions and carrots for 3 minutes. Add the garlic and continue to stir for another minute.

Stir in the flour, then pour in the plant milk, broth, herbs, and seasoning. Cook this for 10 minutes.

Stir in the vegan chicken pieces and peas. Let it cool for a few minutes.

Roll out half of the dough to cover the bottom of the pie pan. Pour the pot pie mixture into the dough-lined pan.

Roll out the rest of the dough to cover the pie. Press down on the edges to seal it. Add a few slits in the center.

 Bake it for 25-30 minutes or until it's golden brown.
