Buttermilk Pancakes (Vegan)

Just a few simple ingredients and less than 20 minutes are all that’s needed to make these homemade vegan buttermilk pancakes. 

Ingredients

Make the buttermilk by combining the apple cider vinegar and soy milk. Let it sit for a few minutes while it curdles.

Whisk the flour, cane sugar, baking powder, baking soda, and salt together.

Pour the melted vegan butter, applesauce, and vanilla into the vegan buttermilk. Stir them together.

Pour it into the dry-ingredient bowl. Very gently, stir them together.

Let the batter sit for a few minutes while heating the pan or griddle to medium heat.

Coat the pan with a small amount of vegan butter or oil. Pour ⅓ cup portions of batter onto it. 

Cook them for 2-3 min on each side. Flip them when bubbles rise to the top.
