Carrot Cake Cupcakes (Vegan)

These delicious carrot cake cupcakes are incredibly fluffy and moist! This vegan dessert is perfect for holidays, parties, or just because!

Ingredients Needed 

Peel and grate the carrots. Set them aside. Combine the dry ingredients in a bowl.

Pour in the wet ingredients. Stir everything together. Then, fold in the carrots and walnuts.

Divide the batter across the lined cupcake pan. Bake them for 20-25 minutes.

Enjoy these as carrot cake muffins or frost them to make cupcakes!

For the frosting, mix the ingredients and chill it in the refrigerator while the cupcakes cool down.
