Cheesy Vegan  Scalloped Potatoes

They are so creamy and tender on the inside yet perfectly crispy on top.

Ingredients

Sauté the onions in vegan butter. Add in the garlic and let it cook until it becomes fragrant.

Sprinkle in the flour and stir it to coat everything.

Pour the plant milk in and stir as the sauce thickens. Next, stir in the vegetable broth. 

Add the nutritional yeast, salt, pepper, paprika, and half a cup of vegan cheddar. 

Slice the potatoes very thin and assemble them at an angle in the dish. 

Pour the cheese sauce over them and top it with the remaining cheddar.

Bake it covered for 40 minutes. Remove the lid and cook them for another 20 minutes.

Remove them when the cheese sauce is bubbling, the cheese on top has melted, and the potatoes are tender.

Garnish them with fresh herbs such as thyme or parsley.
