Vegan Tofu Nuggets

These delicious homemade bites will certainly make you want to skip the store-bought vegan chicken nuggets!

Ingredients To Use

If possible, freeze the tofu overnight or for at least an hour. It's okay if you don't have time for this step, but it does add a nice dense, texture.

Thaw the tofu out in the microwave for 2-3 minutes. Squeeze it and  press the tofu for about 10 minutes.

Combine the marinade ingredients. 

Slice the tofu into inch thick strips and then break them into 1-inch pieces. 

Place the tofu in a dish and pour the marinade on top. Let this marinate for 15 minutes.

Mix the dry ingredients in one bowl and the wet breading ingredients in another. 

Preheat the air fryer and spray the basket with oil. Dip the tofu in the wet batter then gently coat them with the dry mixture.

Add the tofu to the air fryer with some space in-between. Spray them with a little oil.

Bake them for 8-10 minutes. Shake the tray halfway through. Prepare the next batch while this one is air-frying. 

Repeat these steps until all of the nuggets are cooked. Sprinkle them with some parsley, salt, and pepper. Enjoy!
