Vegan Chai Cookies

You will love these perfectly spiced goodies, especially with a hot cup of coffee on a lazy day!


Mix the chai spices together.

Combine the cane sugar and chai spices. Set aside 3 tablespoons to roll the dough balls in later.

Add the brown sugar and vegan butter. Cream them together until it's combined.

Stir in the egg replacer, plant milk, and vanilla extract.

Add the flour, baking soda, and salt into a separate bowl and give them a stir. 

Add these dry ingredients to the wet ingredient-bowl.

Combine and chill the dough for 1 hour. This will help the moist dough firm up, enhance the chai flavors, and make them extra chewy.

Scoop the dough and roll them into balls. Then roll the balls into the sugar chai spice mixture.

Place them on a cookie sheet 2 inches apart.

Bake for 10-12 minutes. Remove them when the edges look like they're starting to firm up. 

Let them cool for 5 minutes and enjoy!
