Easy Vegan Pumpkin Chocolate Chip  Cookies

This quick and easy batch of pumpkin chocolate chip cookies is amazing for fall weather, Halloween, and Thanksgiving!

Ingredients

Preheat the oven to 350° F. Line a large baking sheet with parchment paper.

Melt the vegan butter and blot the pumpkin to remove the extra liquid.

Combine the melted vegan butter with the cane sugar, brown sugar, pumpkin purée, and vanilla extract.

In a separate bowl, whisk together the flour, pumpkin pie spice, cinnamon, salt, and baking soda.

Fold the dry-ingredient mixture into the wet-ingredient bowl.

Stir the chocolate chips into the cookie dough.

Roll the dough into balls and place them onto the cookie sheet. Press them down and add some more chocolate chips on top.

Bake them for 9-11 minutes. Remove them as soon as the edges start to look firm.
