Stuffed Shells (Vegan)

Pasta shells are filled with a creamy combination of vegan cheese, hummus, herbs, and healthy veggies, then baked to perfection in a big dish of marinara sauce. 


Cook the pasta in salted water just until it's al-dente. Reserve some of the pasta water before draining.

Meanwhile, sauté the onions, garlic, zucchini, and spinach.

Combine them with the vegan cheese, vegan cream cheese, hummus, herbs, and seasoning.

Add the sauce and pasta water to a 9x13 dish. Spoon the shell filling into a piping bag and fill each shell.

Top it with more vegan mozzarella. Cover the dish and bake it for 25 minutes.
