Make 1 cup of rice to yield 3 cups when cooked. It's best to make it the day before, but okay if not.

Sauté the shallots for 1-2 minutes until they're softened. Then add the garlic, ginger, and curry paste.

Stir in the coconut milk, soy sauce, lime juice, and sugar. Bring this to a low boil, then add the rice to the pan.

Add the bell peppers and baby corn. Stir it occasionally and let it cook until the extra moisture is absorbed and the rice starts to crisp up.

Turn off the heat and stir in the Thai basil leaves.
