Jumbo Stuffed Shells (Vegan)

Jumbo shells are filled with creamy vegan cheeses, hummus, herbs, and sautéed veggies, then baked to perfection in a bubbling dish of sauce.

Ingredients

Preheat the oven and boil the shells to al dente.

Cook the onions until they're soft. Add the garlic, zucchini, and baby spinach and sauté for 5 minutes.

Mix the sautéed vegetables in a bowl along with the vegan cream cheese, hummus, vegan mozzarella, herbs, and seasoning.

Pour the entire jar of pasta sauce into a 9x13 oven-safe dish. Put the shell filling into a piping bag and fill each shell.

Sprinkle the shells with vegan mozzarella. Cover the dish with a lid or foil. Bake them for 25 minutes.
