Just Egg Breakfast Casserole

Cheesy eggs and sausage come together with delicious sautéed vegetables all on top of a buttery crescent roll layer.

Ingredients

Bring a large skillet to medium heat. Add the olive oil to it. Then, sauté the onions, peppers, and mushrooms until they start to soften.

Add vegan sausage to the pan and cook it for 1-2 minutes.

Stir in kale or spinach. Take the pan off the heat once it has wilted.

Roll crescent roll dough out onto the bottom of a large, greased dish. Press to seal any holes in the dough.

Sprinkle ½ cup of vegan cheese above that layer.

Whisk Just Egg, plant milk, salt, pepper, garlic powder, and paprika together.

Pour the egg mixture all over the casserole layers. Spread the remaining cheese over the egg mixture.

SERENE TRAIL

Bake the casserole in the oven at 350°F for about an hour. Take it out when the top is starting to brown and the middle stays firm when you give the dish a little shake.

Dust it with a fine layer of black salt and then let it cool for at least 10 minutes.
