Pesto Orzo Salad

This vegan Orzo Pesto Salad is so easy to make and bursting with flavor! 


Boil the orzo according to the package instructions until it's al-dente. 

Prepare the other ingredients by draining the chickpeas and olives, and cutting the vegetables into bite-sized pieces.

Combine the lemon juice and dairy-free pesto.

Drain the orzo and add it to a large bowl. Let it cool down for 3-4 minutes.

Mix in the pesto until the orzo is fully coated.

Stir in the remaining ingredients and add salt to taste.

Serve it with a squeeze of lemon and fresh basil.
