Plant Based Strawberry Cookies

These easy plant based strawberry cookies are so soft, chewy, and bursting with sweet strawberries!

Ingredients

Cut the strawberries into small pieces. Blot them with a kitchen towel.

Mix together the softened vegan butter, cane sugar, and brown sugar in a large bowl.

Mix in the strawberry jam, plant milk, vanilla extract, and food coloring.

Whisk the flour, cornstarch, and baking soda together in a separate bowl. Stir the strawberries into this.

Stir all of the ingredients together until it forms a moist cookie dough consistency.

Chill the dough for 15 minutes to allow the butter to reset and flavors to intensify.

Scoop out 1-tablespoon-sized portions of dough and place them on lined baking trays. You can also roll them into balls here.

Bake the cookies for 10-12 minutes. Take them out when you see any golden brown hues on the cookies.
