Plant Based Thai Fried Rice

Use your day-old rice and favorite veggies to change up your weeknight dinner rotation with this easy meal!

Ingredients

Press half of a tofu block for 15 minutes.

Cook the tofu over medium-high heat with nutritional yeast, black salt, and turmeric. 

Sauté onions, carrots, bell peppers, and garlic.

Add the rice, soy sauce, hoisin, and brown sugar to the pan.

Stir occasionally as the rice cooks for 10-12 minutes.

Fold in the basil leaves, green onions, and tofu scramble. 

Serve it with cucumber slices, red chilies, cilantro, and more Thai basil.
