Plant Based Zucchini Banana Bread

This Vegan Zucchini Banana Bread is so moist and delicious! Easily bake this irresistible loaf for breakfast, brunch, or snack! 

Ingredients

Rinse and grate the zucchini. Place the shreds on a kitchen towel and press down to squeeze the moisture out.

Mash the bananas in a large bowl. Leave a few small chunks for added texture.

Stir in the shredded zucchini, brown sugar, plant milk, oil, and vanilla extract. 

Sift in the remaining ingredients except for the chocolate.

Fold the wet and dry ingredients together just until they're combined. Try not to overmix. 

Gently stir in the vegan chocolate chips.

Spread the thick batter into the loaf pan. Smooth the top of it out and add some more chocolate chips on top.  

Bake the bread for 50-60 minutes in the center of the oven. Remove it when a toothpick comes out clean.

Let it cool completely before slicing it. Enjoy!
