Red Curry Lentils

These Red Curry Lentils with Sweet Potatoes and Spinach are so hearty and delicious! 

Ingredients

Rinse and soak the red lentils. Dice the onions, garlic, and ginger. Peel and cut the sweet potatoes into cubes.

Add the onions and sweet potatoes to a large pot with oil. 

Cook them until the onions have softened. 

Stir in the seasoning as it becomes fragrant.

Add in the vegetable broth, tomatoes, sugar, and cinnamon stick.

Add the lentils to the pot. Stir occasionally as it cooks for 15 minutes.

Stir in the coconut milk and cook the curry cook for 10 more minutes.

Turn the heat off. Remove the cinnamon stick, and fold in the spinach and cilantro.

Add salt and pepper to taste. Garnish the lentils with coconut yogurt, cilantro, and lemon. 

Enjoy it as-is or over your favorite type of rice and with a side of naan.
