Sweet Potato And Mushroom Curry

This easy Sweet Potato and Mushroom Curry is such a nutritious meal that’s ready in just 30 minutes and all in one pot!


Sauté the onions and peppers in coconut oil for about 3 minutes to bring their flavors out.

Add the mushrooms and garlic. Let them cook for 3 more minutes as the vegetables start to soften.

Add all of the other ingredients except for the greens. 

Let the curry cook for about 20-25 minutes, stirring it occasionally. Take the pot off the heat when the sweet potatoes have softened.

Scoop the cinnamon sticks out and then stir the greens in. 

Give the curry a squeeze of lemon and enjoy!
