Vegan Banana Bread Cookies

Crunchy toasted walnuts on the outside, but so soft in the middle, these vegan banana bread cookies are a must-try!

This recipe is quick, easy, and a great way to use up your overripe bananas.

In a small bowl, combine flour, baking soda, cinnamon, and salt.

In a large mixing bowl, press the vegan butter into the sugar until it’s crumbly.

Add the mashed bananas, vanilla, and applesauce and stir them into the butter/sugar mixture.

SERENE TRAIL

Gently stir the small bowl of dry ingredients into the larger bowl with wet ingredients.

SERENE TRAIL

Fold ⅓ cup of the walnuts into the dough.

SERENE TRAIL

Scoop dollops of dough  onto the baking sheets. Top with walnuts.

SERENE TRAIL

Bake the cookies in the middle of the oven for 11-12 minutes.
