Vegan Bean Chili

Every spoonful is filled with hearty beans and veggies. This is the perfect one-pot meal for the whole family, and it’s so quick and easy to make!

Ingredients

Dice the onion, garlic, bell pepper, and jalapeños. Drain the liquid from the beans.

Sauté the onions for 2 minutes in olive oil. Add the garlic and cook it for 1 minute.

Add all of the other ingredients except the garnish. Stir everything together.

Cover the pot as the chili cooks. After 30 minutes, mash some of the beans with a potato masher. 

Let it cook for 10 more minutes, uncovered. Garnish it with cilantro, diced onions, and a squeeze of lime.
