Vegan Blackberry Scones

Vegan blackberry scones with lemon glaze are just what you’ve been craving!

They are moist, crumbly, and buttery with delicious blackberries scattered throughout.

Combine flour, sugar, baking powder, and lemon zest. Cut cold butter cubes into the dry ingredients until it’s crumbly.

Add vegan yogurt to the bowl and gently fold it in just until everything is moistened.

Then, gently fold fresh blackberries into the dough.

Move the scone dough to a floured surface. Form it into a circular disc and slice it.

Place them on a lined baking sheet. Brush the tops of the scones with the plant-based milk.

Bake the scones on the top rack for 20-25 minutes at 400°F.

Remove the scones from the oven and place them on a cooling rack. Make the icing by mixing lemon juice and powdered sugar.

Drizzle it over the scones once they have cooled down and enjoy!
