This decadent vegan bread pudding is topped with a homemade butterscotch sauce. It is crisp on the top and so soft and gooey on the inside.

Mix cane sugar, flaxseed meal, and cinnamon together in a large bowl.

Add melted vegan butter, warm oat milk, and vanilla to the bowl. Stir this together. Set it aside for 5 minutes to give the flaxseed time to thicken.

Cut half of a loaf of day-old bread into cubes about 1 inch in size. Add them to a greased casserole dish.

Stir and pour the liquid over the bread. Press the bread down into it. Set it aside for 10 minutes.

Top the bread pudding with chopped pecans and bake it for 45-55 minutes at 350°F.

Heat vegan butter, brown sugar, oat milk, and vanilla in a small pan. Occasionally stir it as it cooks down for 5 minutes. The sauce will bubble and foam up.

Let the sauce simmer for about 15 minutes. Continue to stir occasionally. Remove the pan from the heat when the sauce has thickened. Pour it over the bread pudding.
