Vegan Breakfast Casserole

This hearty vegan Just Egg Breakfast Casserole will make everyone want to jump out of bed in the morning!


Sauté the onions, peppers, and mushrooms until they soften.

Add the vegan sausage to the pan and cook it for 1-2 minutes.

Stir in the greens and take the pan off of the heat once they have wilted.

Roll out the crescent roll dough onto the bottom of a large dish.

Place the sautéed sausage and veggie mixture on top of the crescent dough. 

Sprinkle most of the cheese above that layer.

Whisk together the Just Egg, plant milk, salt, pepper, garlic powder, and paprika. 

Pour the egg mixture on top. 

Spread the remaining vegan cheese over the egg mixture.

Bake the casserole for 40-50 minutes until the center is set. 

Dust it wit black salt and then let it cool for at least 10 minutes.
