Vegan Brookies

The best of both worlds, brownies and chocolate chip cookies, come together to form these glorious Vegan Brookies!


Preheat the oven and grease an 8x8 dish. Melt the butter and chocolate for the brownie layer.

Stir in the cane sugar and set it aside. Make the flax egg. Add it the big bowl along with the dry brownie ingredients.

Fold it all together and press it into the dish. 

Melt the butter in the large bowl for the chocolate chip cookie layer. Stir in the sugars and then the other liquid ingredients.

Gently fold the dry ingredients in. Then, cut the chocolate chips into the dough.

Scoop the cookie dough on top of the brownie layer. Loosely cover the dish and bake it for about 40 minutes. 

Let the brookies cool down before slicing them.

 Enjoy them with a scoop of vegan ice cream!
