Vegan Cheesy Casserole

This delicious Vegan Casserole with Rice is sure to please! A homemade cream of mushroom sauce and cheesy rice surrounds veggies and vegan sausage in every bite.


While rice is cooking, sauté mushrooms and onions.

Coat the veggies with flour and then broth. 

Stir in the plant milk, seasoning, and vegan cheese. Cook this for several minutes as the mixture thickens.

Stir in the vegan sausage, peas, corn, and rice. Spoon it into a dish and top with vegan cheese.

Cover the dish with an oven-safe lid or foil and bake it for 20 minutes. Let the casserole cool for a few minutes.
