Vegan Chocolate Mint Truffles

In addition to being a big hit with everyone who’s tried them, these truffles are incredibly easy to make. 


Crush the thin mint cookies into a fine crumb.

Mix in the softened vegan cream cheese.

Scoop out portions and roll them into balls. Chill them in the freezer for a few minutes.

Melt the vegan chocolate and coconut oil for a few seconds in the microwave.

Dip the cake balls in the melted chocolate and then place them back on the parchment paper.

Chill them in the freezer and add fun toppings if you want!
