Vegan  Egg Muffins

These Vegan Egg Muffins are irresistible and easy to make! Just Egg is poured over fresh vegetables, vegan cheese, and plant-based sausage before being baked into breakfast muffins.

Just a few ingredients!

Preheat the oven. Cook the vegan sausage according to the package instructions and let it cool down.

Cut the bell pepper, baby spinach, and vegan sausage into bite-sized pieces. 

Add them to a bowl along with vegan cheese. 

Stir it together and set it aside for now.

Shake the bottles of Just Egg and squeeze them into a bowl. Stir in the seasoning.

Grease a nonstick muffin pan. Pour a little bit of the Just Egg mixture into each one.

Add the veggie/cheese mixture into the muffin tin. Each one should be about ¾ full. 

Pour the rest of the Just Egg mixture into the muffin tin spots.

Bake them for about 30 minutes or until the top centers are set and a toothpick comes out clean.

Pop them out of the pan as soon as they cool down.
