Vegan Breakfast Casserole

Cheesy vegan eggs and sausage come together with delicious sautéed vegetables all on top of a buttery crescent roll. 


Sauté the onions, peppers, and mushrooms until they soften. Add the vegan sausage to the pan and cook it for 1-2 minutes.

Stir in the greens. Take the pan off the heat once they have wilted.

Roll out the crescent dough onto the bottom of a greased, large dish.

Spread the sautéed vegan sausage and veggie mixture on top of the crescent dough. 

Sprinkle most of the cheese above that layer.

Whisk together the Just Egg, plant milk, salt, pepper, garlic powder, and paprika. 

Pour the Just Egg mixture on top. 

Sprinkle the remaining vegan cheese on top.

Bake the casserole for 40-50 minutes or until the center is set. 

Dust it wit black salt (kala namak) and then let it cool for at least 10 minutes.
