Vegan Mushroom And Potato Soup

This easy vegan potato and mushroom soup is so comforting and delicious! 

Ingredients

Start by sautéing mushrooms, onions, and garlic.

Then coat them with flour. Pour in a little bit of broth to deglaze the pan. 

Add plant milk, cornstarch, potatoes, broth, and seasoning to the pot.

Bring the soup to a boil then lower the heat. Cover the pot and cook it for 20-30 minutes. 

Take it off the heat and stir in the baby spinach. Enjoy!
