Vegan Poke Bowl

Hearty grains, fresh fruit, veggies, and a generous helping of teriyaki-ginger tofu are all brought together with a delicious sriracha aioli sauce.


Press the tofu for 15 minutes to squeeze out the extra liquid. Cook the rice and steam the edamame.

Make the tofu marinade by whisking the teriyaki sauce, garlic, and ginger together.

Cut the tofu into cubes and drizzle the marinade over it. Let this marinate for 15 minutes.

Stir the aioli ingredients together. Prepare the other ingredients by cutting them. 

Assemble the poke bowls and enjoy! Or save them for meals throughout the week.
