Vegan Pot Roast

This Vegan Pot Roast is comforting and full of savory flavor! Hearty vegetables and jackfruit are easily roasted to perfection in a rich gravy. 


Preheat the oven to 400°F. Sauté the onions in a large dutch oven until they are slightly browned. 

Add the garlic and tomato paste. Stir as it cooks for 1-2 minutes.

Deglaze the pot by scraping the bits off of the bottom with pomegranate juice or red wine.

Mix cornstarch into soy sauce. Stir this into the pot along with bouillon, water, vegan worcestershire, and seasoning.

Bring the gravy to a boil, then lower the heat and let it simmer for 3-4 minutes.

Add the chopped potatoes, carrots, mushrooms, jackfruit, and herbs.  

Stir everything to coat it with the sauce.

Cover the pot and cook the veggies in the oven for 50-60 minutes.
