1. Peel the potatoes & carrots. Dice the carrots, celery, onion, and garlic. Cube the potatoes.

 2. Saute' the onions in vegan butter. Add the carrots, celery, and garlic.

3. Add the potatoes, broth, and seasoning. Cover the pot  & cook for 15 minutes.

4. Add plant milk, vegan cheese, & vegan sour cream. Cook covered for 10 more minutes.

5. Mash the soup to your desired consistency.

6. Add toppings such as vegan cheese, chives, vegan sour cream, and vegan bacon.
