Vegan Pozole Rojo

Jackfruit and hominy are simmered in a homemade chile broth and then topped with fresh veggies. 


Add onions, garlic, and dried chilies to boiling water. Lower the heat to medium and cover the pot. 

Turn the heat off after  10 minutes or until everything has softened.

Transfer them to a blender and purée it into a smooth sauce.

Sauté the jackfruit for 10 minutes until the edges are crispy and browned.

Pour the sauce through a mesh strainer and into the large pot with the jackfruit. 

No need for a strainer if you have a high-powered blender.

Stir in the remaining ingredients. Cook the jackfruit pozole on low for 30-40 minutes

Prepare the toppings while the pozole cooks.
