Vegan Pumpkin Banana Bread

This Vegan Pumpkin Banana Bread is perfectly spiced and deliciously moist! Nutritious pumpkin purée and ripe bananas are baked into a sweet, warm loaf.


Preheat the oven to 350°F and grease a loaf pan.

Mash the bananas in a large bowl. It’s okay to leave some chunks for added texture.

Stir in the pumpkin, sugar, oil, and vanilla. Add the flour, pumpkin pie spice, baking powder, baking soda, and salt.

Mix the batter with a spoon until it’s just combined. Try not to overmix it to prevent the bread from becoming tough and chewy.

Gently fold in the nuts if you’re using them. Spoon the thick batter into the loaf pan.

Bake the bread for 50-60 minutes until a toothpick comes out mostly clean and dry.
