Vegan Pumpkin Chocolate Chip Cookies

So soft and chewy, these vegan pumpkin chocolate chip cookies are a perfect Fall dessert!  They’re made with just a few ingredients, but loaded with delicious flavor!

Ingredients: sugar, flour, coconut oil, pumpkin puree, maple syrup, vanilla, salt, baking soda, pumpkin pie spice, cinnamon, & chocolate chips.

Whisk dry ingredients, except chocolate chips, in a large bowl. Mix wet ingredients in a small bowl. Combine all ingredients, then fold chocolate chips in.

Roll into small balls, place on a cookie sheet, and press them down to flatten. Bake in the oven at 350° F for 12 minutes.
