Vegan Queso Fundido

You are going to love this easy and incredibly cheesy dip! Melted cheese, chorizo, and sautéed veggies come together in such a delicious way!

Ingredients

Sauté the onions and jalapeños in a 7” skillet over medium-high heat until they’re soft.

Add the chorizo, garlic powder, and salt to the pan.  Cook it for 3-4 minutes.

Take the skillet off the heat and remove ⅓ of the chorizo to save for toppings.

Rinse the cheeses to remove the separating agent and to add extra moisture to them.

Add the cheese to the skillet and stir it in with the chorizo, jalapeños, and onions.

Cover the dish with an oven-safe lid or foil and bake it in the oven. After 20 minutes, check to make sure the cheese is mostly melted. 

Remove the lid and let it cook for 5 more minutes so the cheese can brown a bit. Make sure not to overcook it or the cheese will dry out.

Let it cool for about 5 minutes. Then, top the queso fundido with the remaining chorizo, jalapeños, onions, and other toppings.
