Beat cold butter and sugar until they’re fully combined and have a grainy texture.

Mix in vegan buttermilk (plant milk + apple cider vinegar), vanilla flour, baking powder, and salt..

Pipe the batter into thick strips about 2 ½ inches long.  Bake them for 10 minutes at 350°F.

Brew a strong cup of coffee or espresso. Stir in sugar while it’s still hot. Add optional rum when cool.

Beat vegan cream cheese and maple syrup together. Sift in powdered sugar and beat it into the mixture

Gently fold in the whipped topping with a spoon or spatula.

Dip each ladyfinger into the coffee and line the bottom of an 8x8 dish with them.

Spread half of the mascarpone cream over the ladyfinger layer.

Create another layer with coffee-soaked ladyfingers, then top them with the remaining cream.

Cover it and chill it in the refrigerator for 3 hours or more. Dust the top with cocoa powder before enjoying.
