Vegan Tofu Nuggets

These flavorful tofu nuggets are so juicy with a crunchy breading! Enjoy these seasoned bites on your next game-day or family night! 

Ingredients

Freeze the tofu overnight, if you can, or for at least an hour. No worries if you don't have time for this step, but it does add a nice texture.

Place the frozen tofu on a plate and thaw it in the microwave for 2-3 minutes. Squeeze out the excess liquid and then press the tofu for 10 minutes.

Whisk together the marinade ingredients in a small bowl. 

Slice the tofu into ½ inch thick strips and then tear them into 1-inch pieces. 

Place the pieces in a shallow dish and pour the marinade on top. Let them soak in the refrigerator for 15 minutes.

Mix the dry breading ingredients in a shallow bowl or plate. Then, combine the wet batter ingredients in a separate bowl.

Heat the air fryer to 375°F and spray the basket with oil. Dip the tofu in the wet batter then gently toss them in the dry mixture until fully coated. 

Add the breaded nuggets to the basket with some space in-between each one. Spray them with a thin layer of oil.

Bake the nuggets for 8-10 minutes or until they’re golden brown. Shake the tray halfway through. Prepare the next batch while one is air-frying. 

Repeat these breading and frying steps until all of the nuggets are cooked. Sprinkle parsley and more salt and pepper over the crispy nuggets.
