- 4 vegan bratwurst links (such as Impossible or Beyond)
- 2 tablespoons vegan butter, divided
- ¾ cup vegan beer, (half of a 12 oz bottle or can)
- 1 yellow onion, thick slices
- ¼ teaspoon salt
- ¼ teaspoon pepper
- ¼ teaspoon dried oregano
- ½ tablespoon brown sugar
- 1 teaspoon caraway seeds
- 4 buns
- Optional Toppings: sauerkraut, spicy mustard
Slice the onions and heat a medium-sized pan or skillet over medium-high heat. Add half of the butter to the pan.
Sear the vegan brats by cooking them for 1-2 minutes on each side. Remove them from the pan for now.
Add the remaining butter along with the onions, salt, pepper, oregano, and brown sugar to the pan. Stir occasionally as they cook for about 3-5 minutes or until the onions start to caramelize.
Place the brats over the onions, pour half of a bottle of vegan beer into the pan, and sprinkle the caraway seeds over everything. Lower the heat to medium.
Turn the brats occasionally as they cook. Keep the pan at a low boil till the beer has reduced to a sauce (9-10 minutes).
Serve the brats on buns, top them with some of the onion sauce, and add any of your favorite toppings such as sauerkraut and spicy mustard.
Variation Ideas
- Sear the cooked brats on the grill.
- Toast the insides of the buns for added flavor and crunchiness.
- Add fun toppings such as jalapeños, guacamole, relish, fresh onions, chili, or coleslaw.
Leftovers
Store leftover brats and beer sauce in a sealed container in the refrigerator for 3 days. Reheat them in the microwave until heated through.
