Homemade  Vegan Ravioli

There is something so special about fresh pasta and that’s what this Homemade Vegan  Ravioli recipe is all about! 

Simple Ingredients

To a bowl, add the flour, salt, olive oil, and water. Stir this together until it starts to stick together.

Knead this ball of dough until the ingredients are fully combined.

Form it into a mound and cover it with plastic wrap. Chill this dough in the refrigerator for 30 minutes.

Meanwhile, sauté the spinach until it's wilted. Chop it and add it to a bowl. 

Mix the spinach with the vegan cheeses, herbs, and spices.

Roll the dough onto a floured surface until it's about a quarter of an inch.

Use a drinking glass or a cookie cutter to cut circles that are 2 to 3 inches.

Add some of the filling. Brush water around the edge of another circle and place it over the bottom circle. 

Close the ravioli by firmly pressing down with a fork. Repeat these steps until all of the pasta is stuffed.

Add a few ravioli pockets to a large pot of boiling water. Let them  cook for 4-6 minutes, or until they float. Repeat until all the pockets have been cooked.
