Tofu Scramble Sandwich

This healthy Tofu Scramble Sandwich is high in protein, easy to make, and so delicious! 


Drain the tofu block and press it for 15 minutes. 

Meanwhile, dice the onions and mince the garlic. Make the sauce by whisking the plant milk with the seasoning.

Sauté the onions and garlic for 3-4 minutes or until they’re soft.

Add egg sauce and vegan cheese shreds to the pan. Use your hands to crumble the tofu into 1 inch chunks.

Stir occasionally while it cooks for 10 minutes or until most of the excess liquid from the tofu has cooked off and the cheese has melted.

Assemble your sandwiches.

Toast the muffins and add vegan butter, mashed avocados ⅓ cup of the scramble, chives, greens, and sliced vegan cheese.
