Vegan Spicy Vodka Pasta

This rich and creamy twist on penne alla vodka is deliciously spicy and ready in 20 minutes!


Cook the pasta to al dente in boiling water. Save ½ cup of the water before draining it. 

Sauté diced shallots for 2-3 minutes. Add garlic and cook it for another minute.

Add in the tomato paste and stir often as it cooks for 4-5 minutes.

Stir in the lemon juice, vegan creamer, red pepper flakes, salt, and pepper.

Cook the sauce for a few more minutes until it thickens. 

Add the drained pasta, ¼ cup of the pasta water, and the vegan butter.

Stir to coat the noodles until the butter has melted. Add more pasta water if you want a thinner sauce.

Sprinkle vegan parmesan and fresh basil. Enjoy!
