For the Dough

  • Grease an 8x8 dish. In a large bowl, combine the dry dough ingredients (flour, sugar, baking powder, and cinnamon). Use a fork or pastry cutter to cut in the butter. Stir in the milk and vanilla.
  • Once the mixture starts to clump together, switch to using your hands. Gently work the dough for about 2 minutes until the ingredients are fully incorporated.
  • Use floured hands to form the dough into a ball. Then roll it into a rectangle about 11x13 inches in size on a smooth surface. Add generous amounts of flour to the pin and surface if you notice any sticking.

For the Filling

  • Spread the softened butter over the entire surface of the dough. In a small bowl, combine the brown sugar and cinnamon. Sprinkle this mixture over the dough, then press it into the buttered dough.
  • Starting at a long edge, slice the sheet into thirds, then each of those into thirds for a total of 9 strips. Snuggly roll each one and place them equal distance apart in the dish.
  • Heat the oven to 375°F (190°C) and place the cinnamon rolls in the refrigerator to chill while it's heating. Once the oven is fully heated, pour the vegan creamer over the rolls and bake them for 20-25 minutes or until they are a very light golden brown.

For the Optional Icing

  • In a medium-sized bowl, stir together the butter and cream cheese. Then, add the powdered sugar through a sifter before stirring it in. Ice the rolls as soon as they come out of the oven and enjoy!

Notes

Take the rolls out of the oven as soon as they are a light golden color and puffed up in size. They will look very moist and gooey because of the creamer. Don’t wait for them to appear dry, as that will cause them to overcook.
