Ingredients

  • 1 tbsp olive oil
  • 1 medium sweet onion, diced
  • 12-16 ounces vegan ground "beef" such as Impossible, (340g)
  • 3 cups vegetable broth, or no-beef bouillon with water, (710ml)
  • 1 1/2 cups plant milk, or creamer, (355ml)
  • 3 tbsp ketchup
  • 1 tsp paprika
  • 1 tsp garlic powder
  • 1 tsp chili powder
  • 1 tsp salt
  • 1/2 tsp dried oregano
  • 1/2 tsp pepper
  • 8 ounces macaroni (uncooked), ~2 cups, (227g)
  • 1 1/2 cup vegan cheddar shreds, (150g)
  • 2 tbsp nutritional yeast
  • garnish with fresh parsley

Instructions

  • Heat a large pot or pan over medium-high heat. Select a pot that has a fitted lid, if possible.
  • Add the olive oil to the hot pan. Once the oil is hot, add the diced onions and vegan crumbles. Sauté them until the onions are soft and translucent and the vegan meat has a few brown crispy edges (5-6 min). Break up larger clumps of crumbles during this time.
  • Add a splash of broth and use it to deglaze the pan by scraping the food off the bottom. Stir in the broth, plant milk, ketchup, and seasoning.
  • Bring this to a boil and then stir in the pasta. Reduce the heat to medium and cover the pot. Let the pasta cook for about 15-17 minutes until it’s al dente. Stir it occasionally and scrape the bottom and sides. Add a small amount of water or broth if needed. The time and amount of liquid can vary depending on the types of pots and lids.
  • Turn the heat off and stir in the vegan cheddar and nutritional yeast. Garnish the Vegan Hamburger Helper with parsley and enjoy!

Notes

Store leftovers in the refrigerator for 5 days or the freezer for 3 months. Reheat it in the microwave, stirring occasionally, until it's heated through.
