It is unbelievable how much this Vegan Hamburger Helper tastes just like the original! Cheesy pasta, plant-based crumbles, and savory flavors come together in such an irresistible way. Take a stroll down memory lane with this comforting one-pot wonder!
Heat a large pot or pan over medium-high heat. Select a pot that has a fitted lid, if possible.
Add the olive oil to the hot pan. Once the oil is hot, add the diced onions and vegan crumbles. Sauté them until the onions are soft and translucent and the vegan meat has a few brown crispy edges (5-6 min). Break up larger clumps of crumbles during this time.
Add a splash of broth and use it to deglaze the pan by scraping the food off the bottom. Stir in the broth, plant milk, ketchup, and seasoning.
Bring this to a boil and then stir in the pasta. Reduce the heat to medium and cover the pot. Let the pasta cook for about 15-17 minutes until it’s al dente. Stir it occasionally and scrape the bottom and sides. Add a small amount of water or broth if needed. The time and amount of liquid can vary depending on the types of pots and lids.
Turn the heat off and stir in the vegan cheddar and nutritional yeast. Garnish the Vegan Hamburger Helper with parsley and enjoy!
