Equipment

  • skillet medium-sized
  • casserole dish, 7x11 inches or any medium size

Ingredients

  • 1 tbsp avocado oil, or olive
  • 12 oz vegan ground beef, (340g)
  • 1 small yellow onion, diced
  • 2 garlic cloves, minced
  • 1 tbsp taco seasoning
  • 1/2 cup water, (120ml)
  • 1 cup salsa, (250g)
  • 1/2 cup corn, frozen, (85g)
  • 15 oz can of black beans, rinsed, (439g)
  • 2 cups tortilla chips, measure after breaking into pieces, (60g)
  • 1 1/2 cups vegan cheese, Mexican blend or cheddar, (170g)
  • topping ideas: lettuce, tomatoes, olives, jalapeños, onions, vegan sour cream, avocados, cilantro, lime juice

Instructions

  • Preheat the oven to 375°F and warm a medium skillet over medium heat. Add the oil and then the onions. Sauté them for 3-4 minutes or until they start to soften.
  • Add the vegan beef to the pan. Break it up and stir as it cooks for 5 minutes or until it browns. Stir in the garlic and taco seasoning. Let them cook and become fragrant for a minute or two.
  • Deglaze the pan by adding the water and scraping off any bits that are stuck to the bottom. Add the salsa, beans, corn, and 1/2 cup of vegan cheese. Turn the heat down to medium-low and let this simmer for 5 minutes.
  • Line the bottom of a medium-sized casserole dish with the broken tortilla chips. Spoon the mixture from the pan on top and spread it out while trying to keep the chips in place. Sprinkle the remaining vegan cheese on top.
  • Cover the dish and bake the casserole for 30 minutes. Meanwhile, prepare your toppings. Take it out when the cheese is mostly melted. Let it cool for a few minutes before adding the toppings. Slice it into squares and enjoy!

Notes

Covering the dish helps create a steamy environment for the cheese to melt. If yours isn't melting too well, you can spritz some water on top, cover it again, and bake it for a few more minutes.
