  • Preheat the oven to 350°F (180°C). Grease a loaf pan and add a strip of parchment paper if you plan to remove the bread from the pan before slicing it.
  • Melt the vegan butter for about 30 seconds in the microwave. Let it cool down for a few minutes while preparing the bananas.
  • Mash the bananas, leaving a few small chunks for texture. Scoop the mashed bananas into measuring cups to ensure you have exactly 1.5 cups. Put them in a large mixing bowl. Stir in the melted butter and brown sugar.
  • Use a sifter to add the flour and baking powder. Gently fold everything together until you don’t see any more streaks of flour. Try not to overmix this.
  • Spoon the mixture into the loaf pan. You can top it with some brown sugar if you want a sweet, crispy topping.
  • Bake the bread for 45-55 minutes until a toothpick comes out clean. Check a few places in case you poke into a chunk of banana. Let the bread cool down before slicing into it. Enjoy!

Notes

  • Brown and spotted bananas are best here because of the natural sweetness they add. 
  • Measure your flour by spooning it into the measuring cup and then scraping the top off with a straight edge, such as a butter knife. Try not to overmix the dough so that the bread remains tender. 
  • Applesauce can be added in with the mashed bananas if you're a little short on the full 1.5 cups that are needed.
