Preheat the oven and grease your loaf pan. Melt the vegan butter in the microwave and mash the bananas while the butter cools down.
Measure out the bananas. If you happen to be a little short, you can add in some applesauce to make up the difference. Stir the bananas, brown sugar, and butter together.
Use a sifter to add in the flour and baking powder. This helps to break up any clumps before folding it into the wet ingredients. Gently combine this into a smooth mixture, trying not to overmix.

Ingredients
- ½ cup vegan butter, (salted)
- 1 ½ cups bananas, (3-4 bananas)
- ½ cup brown sugar
- 2 cups all-purpose flour
- ½ tablespoon baking powder
Instructions
- Preheat the oven to 350°F. Grease a loaf pan and add a strip of parchment paper if you plan to remove the bread from the pan before slicing it.
- Melt the vegan butter for about 30 seconds in the microwave. Let it cool down for a few minutes while preparing the bananas.
- Mash the bananas, leaving a few small chunks for texture. Scoop the mashed bananas into measuring cups to ensure you have exactly 1.5 cups. Put them in a large bowl mixing bowl. Stir in the melted butter and brown sugar.
- Use a sifter to add in the flour and baking powder. Gently fold everything together until you don’t see any more streaks of flour. Try not to over mix this.
- Spoon the mixture into the loaf pan. You can top it with some brown sugar if you want a sweet, crispy topping.
