This vegan Just Egg French Toast will wake the entire house with a delicious aroma as soon as it hits the sizzling hot pan. Each decadent slice has a crispy sweet layer on the outside and a soft creamy custard center. Drizzle maple syrup overtop and enjoy the most divine breakfast or brunch!

Being vegan does not mean that we can’t enjoy something as lovely as French toast! All you need to do is make a thick cinnamon-vanilla mixture that is absorbable by the bread but also forms a layer on the surface.

Thanks to Just Egg, this homemade French toast tastes just like the original, yet, it’s completely eggless and dairy-free! The primary ingredient in this egg replacer product is mung bean protein. I also like to use it to make Breakfast Burritos and Casserole.

I really think that you might wonder why you’ve waited so long to make this French toast after you sink your teeth into the first glorious bite. Especially because it’s such a breeze to whip up and the ingredients are readily available at most stores. 

We like to make this easy “eggy bread” recipe to eat throughout the week. Slices can be kept crispy by reheating them in a pan or toaster oven, but we keep it simple by using the microwave.

Ingredients and Substitutions

  • Sugar – I like to use brown sugar here for its deep flavor but another granulated sweetener of your choice works. 
  • Cinnamon – Use ground cinnamon. 
  • Nutmeg – Optional and can be omitted if you don’t have any. 
  • Salt – Just a bit helps to enhance and balance the other flavors. 
  • Just Egg – Use the liquid form of this egg replacer that can be found near the eggs or vegan section at the grocery store. 
  • Vegan Creamer – Use unflavored, unsweetened vegan creamer or half and half that is generally used for coffee for a nice fluffy custard mixture. I like Silk brand. Another option is to use regular plant-based milk but it will create a slightly thinner mixture.
  • Vanilla – Try to use a good quality pure vanilla extract. 
  • Almond Extract – This is optional but so good if you have some on hand!
  • Bread – I prefer to use thick slices of bread such as French, sourdough, or brioche; however any kind will do.
  • Vegan Butter – Gives a delicious buttery flavor and helps toast the bread to a beautiful golden brown.

Step-by-Step Instructions

Here are some quick visual steps. Find the full recipe with exact measurements on the recipe card below.

Slice the bread into thick slices if it isn’t already sliced. If your slices are on the thinner side, you’ll want to soak them for less time.

If the bread isn’t stale, dry it out either by laying the slices out for a few hours, overnight, or baking them for a few minutes. Stale bread soaks up the custard mixture very nicely without becoming soggy.

Mix the brown sugar and spices in a small bowl. Tip – If the spices are mixed with the sugar, they are less likely to float to the top of the custard mixture later. Add the dry sugar and spice mixture to a large, shallow dish such as a pie pan.

Pour the Just Egg and other liquid ingredients into the shallow dish. Whisk everything together. 

Heat a nonstick skillet then coat it with vegan butter.

Dip bread slices in the custard mixture just before adding them to the hot pan. Let them soak on each side and shake off the excess before adding them to the pan.

Cook It

Pan fry the french toast slices on each side until they’re golden brown. Use a sturdy, thin spatula turner to flip them over because a little sticking is expected.

If they are hard to slide your spatula underneath, your pan may not have had enough vegan butter or you need to let them cook a little longer before flipping them.

After you’ve cooked the first set, wipe the skillet mostly clean and add more vegan butter for the next set of slices. Repeat the soak and fry steps until all the slices are cooked.

Place the cooked slices in the microwave or in a covered dish to keep them warm while you’re cooking the remaining French toast.

Serve the French toast warm with any of your favorite toppings and enjoy!

No-Waste Ideas

Storage & Reheating

Store slices covered in the refrigerator for 4 days or freezer for 3 months. Reheat the slices in a pan or toaster oven until they’re warmed through. You can also reheat them in the microwave but this will soften them a little.

Troubleshooting

  • Custard layer burning before the center has time to cook: The pan is too hot.
  • Sticking: A little sticking is expected but it could be that the slices are not ready to be flipped or the pan needed more butter.

You can try to squeeze in more slices if your pan is large enough, but make sure to leave room for flipping them over.
  • Pan fry the french toast slices for 3-4 minutes on each side until they’re golden brown. Use a sturdy, thin spatula turner to flip them over because a little sticking is expected.
  • After you’ve cooked the first set, wipe the skillet mostly clean and add another tbsp of vegan butter for the next set of slices. Repeat the soak and cook steps until all the slices are cooked.
  • Place the cooked slices in the microwave or in a covered dish to keep them warm while you’re cooking the remaining French toast. Serve the French toast warm with any of your favorite toppings and enjoy!
