Dates became my best friend at the end of my pregnancy with Rowan. They are perfectly sweet and healthy. This recipe is a twist on the original by Eating Bird Food where I use date halves and add some maple syrup for a deep, rustic element.
I like to make a batch to keep in the freezer for those moments when I’m craving something sweet and chocolatey.
All you need are a handful of ingredients and a few minutes!
Just halve your pitted dates, pipe a peanut butter-maple syrup mixture onto them, dip them in melted chocolate, and sprinkle peanuts on top. Such a simple process!
The only hard part is trying really hard not to eat them all once they’ve cooled!
These vegan snickers dates are a great finger-food candy for holidays like Halloween, Christmas, or Valentine’s!

Ingredients and Substitutions
- Medjool Dates - These are naturally sweet, easy to work with, and so nutritious. I like to buy the pitted ones for convenience.
- Peanut Butter - Creamy peanut butter works best for ease when piping it onto the dates. Feel free to change it up with any other nut butter like almond or hazelnut.
- Maple Syrup - Blends so nicely with the peanut butter to give it a deep level of sweet flavor.
- Chocolate - Any vegan dark or semi-sweet chocolate will be just fine! I’ve used chocolate chunks, chocolate chips, or broken-up chocolate bars here.
- Coconut Oil - Just a bit of this helps smooth and thin out the melted chocolate.
- Peanuts - Chop some peanuts or any nuts to sprinkle over the chocolate-covered dates.
- Salt - This is optional but I have found a touch of regular or flaky salt to truly take these peanut butter dates over the top!
How to Make Snickers-Stuffed Dates

Find a tray that will later fit in your freezer and line it with parchment paper.
Chop the peanuts if they are whole.
Slice the dates in half (lengthwise) to create 10 boats. Remove the seeds if they are not pitted already. I find that half-sized dates are easier to bite into and are the perfect size for snacking.
Mix the peanut butter and maple syrup in a small bowl. Add a splash of water if it’s too thick to stir.
Spoon or pipe 1-2 teaspoons of the peanut butter mixture into the shallow indentation of each date. I add the mixture to a sandwich bag, push out the air, seal it, and then clip a tiny piece off the corner. Piping the mixture onto the dates this way is so easy and mess-free!
Add the chocolate pieces and coconut oil to a small, microwave-safe bowl. Heat them in the microwave at 30-second intervals, stirring in between until the chocolate has melted.
Once the chocolate is smooth and lump-free, dip the peanut butter dates in the chocolate with a fork. Keep the peanut butter side up as you spoon chocolate over the top.
Gently place each date on the parchment paper. Sprinkle chopped nuts and sea salt over the melted chocolate.
Let the dates snickers cool in the freezer for 10 minutes. Enjoy these vegan candies as soon as the chocolate sets.
Store them in a sealed bag or container in the refrigerator for 7 days or in the freezer for 3 months.
