    This tasty apple galette is incredibly easy to put together and perfect for any time of the year. Try it for breakfast with coffee, dessert, family gatherings, holidays, you name it! No need to fuss with a pie shell, fancy latticework, or time-consuming prep work on this one. The best part is that you can whip it up in less than an hour from start to finish.

    You can use the vegan crust in this recipe for any other pie or galette you plan to bake. Easily change up the fruit filling with other favorites such as blueberries, peaches, pears, or strawberries.

    Ingredient Notes and Substitutions

    Apples - For this recipe, I like to use the firmer variety of apples that are good for baking such as granny smith or honey crisp. 

    Flour - Use all-purpose flour or 1 to 1 gluten-free if you prefer.

    Sugar - This recipe combines both vegan brown sugar and raw cane sugar.

    Butter - Unsalted plant-based butter such as Country Crock works. You’ll want to keep it cold until needed. 

    Cornstarch - Cornstarch helps to thicken the apple filling. 

    Water and Salt - We add cold water to the dough, a little at a time. Salt adds a flavor-enhancing depth to the recipe.

    Lemon Juice - Use either freshly squeezed lemon juice or the lemon juice from the produce department of the grocery store. This helps add a hint of an acidic element while also keeping the apples from browning too fast. 

    Cinnamon - Ground cinnamon works as a perfect cozy complement to the apples in this vegan galette. You can sprinkle in other favorite spices such as nutmeg or ground cloves as well.

    How to Make a Vegan Apple Galette

    This recipe has a few simple steps. First, you’ll make the dough for the crust. While it’s chilling, you’ll make the crumb topping and apple filling. Then, you’ll put all of them together to form the galette. 

    Make the Dough - In a large bowl, combine flour, salt, and sugar. Once combined, use a fork or pastry cutter to cut the cold butter into the dry ingredients until it has formed a grainy texture. Stir in cold water, 1 tablespoon at a time. When the dough begins to clump together, transfer it to a lightly floured surface.

    Knead the Dough - Gently knead the dough for about 3 minutes to fully incorporate the ingredients. Add a pinch of flour here and there if the dough is sticking to your hands or the surface. Place the ball of dough back in the bowl and into the refrigerator to chill for about 20 minutes.

    Prepare the Streusel Topping - While the dough is chilling in the refrigerator, prepare the galette crumble topping. Use a fork to mix flour, brown sugar, cane sugar, and cinnamon in a small bowl. Cut cold butter into the mixture until it’s crumbly, and that’s it! Place the bowl in the refrigerator until you’re ready to add the topping.

    Make the Filling - Preheat the oven to 375°F. In a large bowl, mix brown sugar, cornstarch, and cinnamon. Peel, core, and slice the apples into ¼ inch thick slices. Place the apple slices in the large bowl and top them with lemon juice. Toss the slices until they are coated.

    Roll Out the Dough - Remove the dough from the refrigerator and roll it out either directly on parchment paper or a lightly floured surface. I prefer to work off the parchment paper at this point to make it easier to transfer the galette over to the baking pan before baking. The dough should be about ¼ inch thick and in the shape of a circle or oval (about 8-12 inches in diameter).

    Add the Apple Slices - Add the apple slices to the center of the dough. Add each apple slice slightly over the previous one, but make sure the layer does not exceed two apple slices so they cook evenly. Let the liquid drip off each slice before adding it to the dough and do not pour the liquid over the apples. This is because the slices will produce plenty of juice during the baking process. Keep the apple slices about 1 inch away from the edge of the dough. Fold and pinch the edge of the dough over to cover the edge of the apple slices.

    Top the Galette - Move the galette and parchment paper over to a medium-sized baking sheet. Sprinkle the crumble topping over the entire galette, including the crust edge. Press the toppings down a bit to prevent them from rolling off the galette.

    Bake the Galette- Bake the galette in the oven for 30-35 minutes, or until the top is golden brown and bubbly. Let it cool for a few minutes and enjoy!

    • Keep the butter and water cold until you’re ready to use them. 
    • No need to include any of the remaining liquid from the pie filling mixture. 
    • Keep the apple slices thin (¼ inch) so they are able to fully cook in the oven.
